Varieties of Sturgeon Roe: Antonius Caviar Special Set
Antonius Caviar offers two varieties of caviar from two sturgeon species: Oscietra caviar, sourced from the Acipenser gueldenstaedtii sturgeon, and Siberian caviar from the Acipenser baerii sturgeon. The Antonius Caviar special set includes both caviar varieties in their six-star category, featuring the largest roe of each type, accompanied by salt and preservative E 285.
Caviar is a highly concentrated source of vitamins and minerals. It is rich in proteins, monounsaturated fats, and Omega-3 polyunsaturated fatty acids (EPA + DHA). Additionally, it has a high content of vitamins B12, D, and E, as well as phosphorus and selenium, serving as a natural source of vitamin A, iron, and zinc. It provides a balanced composition of fatty acids, with an Omega-3 to Omega-6 ratio of 1:1.

Oscietra Caviar
The Oscietra caviar features large roe pearls with a lighter colour range that varies from grey to olive green, brown, and even golden hues. The diameter of the pearls can range from 2.7 to 3 mm. It stands out for its pleasantly nutty flavour with a velvety, buttery finish. Antonius Caviar offers three products based on the star rating and roe size:
Six Stars: Roe with a diameter greater than 3 mm.
Five Stars: Roe with a diameter of 2.9 to 3 mm.
Four Stars: Roe with a diameter of 2.7 to 2.9 mm.
Siberian Caviar
The Siberian caviar features medium-sized roe, with a diameter ranging from 2.4 to 3.2 mm, in colours that vary from black to grey and brown. It is known for its rich, complex flavour with a distinctive and lasting finish. While the set includes six-star roe with a diameter of over 2.7 mm, this product is also available in:
Five Stars: Roe with a diameter of 2.6 to 2.7 mm.
Four Stars: Roe with a diameter of 2.4 to 2.6 mm.

Caviar Production
Antonius Caviar only uses female sturgeons for breeding. This is crucial, as 90% of the quality of the caviar depends on the conditions in which the fish live. The company has the ability to control every aspect of their lives: from reproduction to the properties of their food, water quality, and even health management.
The production process is reviewed down to the smallest detail. Its journey is supervised by certified food technologists and ichthyologists. Thus, its processing plant, one of the most modern in the world, meets all technological requirements and the highest hygiene standards, certified with BRC and IFS certifications.
Lastly, Antonius Caviar Premium is another exclusive offering from the company. Due to the exceptional quality of this product, it must be stored at low temperatures to preserve the cold chain, specifically between -3ºC and +2ºC. Under no circumstances should it be stored in the freezer. Once opened, the caviar should be consumed within 48 hours for optimal freshness.
